Week’s Dinner Menu


MONDAY

Baked Spareribs Recipe

2 racks of pork ribs

Salt & Pepper to taste

1 Onion sliced

½ Cup Tomato Juice

 

Cut ribs into 3 portions.  Brown over low heat in heavy skillet.  Turn to brown evenly.  Add remaining ingredients.  Cover.  Bake at 350° for 2 hours.  Add more tomato juice if needed.

 

Barbecue Sauce Recipe

Combine in saucepan 1 tsp. salt, ¼ tsp. pepper, 1 tsp. Paprika, 1 Tbsp. sugar, ½ cup chopped onion, ½ cup water, and cup ketchup.  Heat to boiling.  Simmer 20 minutes.  Remove from heat.  Add ¼ cup lemon juice, 2 Tbsp. butter.  Mix and pour over cooked ribs.

 

TUESDAY

Navajo Tacos Recipe

1 lb. Hamburger

8 oz. can tomato sauce

1 can chili

1 tsp. chili powder

1 tsp. cumin

1 tsp. garlic powder

½ cup diced onion

1 cup shredded cheese

1 cup shredded lettuce

4 – 6 scone dough

 

Fry hamburger and drain grease.  Sauté onion.  Add chili, tomato sauce and spices.  Simmer 10 minutes.  Fry scones.  Top scone with chili, cheese and lettuce.

 

WEDNESDAY

Pizza Style Pasta Recipe

12 oz. penne pasta, cooked

1 lb. Italian sausage

1 cup mushrooms, sliced

14 ½ oz can tomatoes diced

1 Tbsp. dried Italian seasoning

8 oz. mozzarella cheese, grated

 

Preheat oven to 450°.  In non-stick skillet brown sausage and mushrooms about 8 minutes.  Add tomatoes and Italian seasoning.  Cook an additional 2 minutes.  Pace ½ pasta on 12” round pizza pan or 9 x 13 casserole dish.  Sprinkle with ½ of cheese.  Add remaining cooked pasta.  Top with meat mixture and remaining cheese.  Bake for 5 minutes.  Serve.

 

THURSDAY

Smothered Burritos

1 Pkg. flour tortillas

1lb. hamburger, cooked and seasoned with chili powder and garlic salt.

Grated cheese

Chopped tomatoes

 

Combine all ingredients into tortilla, making a burrito.

 

Chili Verde Sauce for Burritos

1 lb. pork cut into chunks

Sour Cream

3 cups boiling water

3 beef bouillon

1 medium onion, diced

1 Tbsp. Jalapeños

2 cans diced green chilies

½ cup flour

3 Roma tomatoes, diced

Salt and Pepper

12 oz. bottle mild green taco sauce

 

Cook pork in 1 Tbsp. oil.  Season with chili powder.  Add remaining ingredients except tomatoes and flour.  Bring to a boil.  Cook on medium heat for 20 minutes.  Mix flour with 1 cup of water and stir.  Pout into pan and stir constantly until thick.  Then add tomatoes and serve over burritos.  Top with sour cream.

 

FRIDAY

Garden Fresh Cacciatore

4 fresh peppers

1 onion

½ mushrooms

6 Roma tomatoes

3 garlic cloves, crushed

8 oz can tomato sauce

2 boneless chicken breasts

12 oz. fettuccini noodles

 

Cut chicken into large chunks.  Brown in skillet.  Add onions, peppers, and garlic.  When tender add diced Roma’s.  Simmer 10 minutes.  Add tomato sauce and mushrooms.  Simmer 10 minutes and serve on cooked fettuccini noodles.

¨      9 Roma tomatoes

¨      3 garlic cloves

¨      2 boneless chicken breasts

¨      12 oz. fettuccini noodles

¨      4 fresh peppers

¨      12 oz bottle mild green taco sauce
