Easy Lasagna Recipe

Easy Lasagna

 

INGREDIENTS

1 pound lean ground beef

1 onion, chopped

1 (4.5 ounce) can mushrooms, drained

1 (28 ounce) jar spaghetti sauce

1 (16 ounce) package cottage cheese

1 pint part-skim ricotta cheese

1/4 cup grated Parmesan cheese

2 eggs

1 (16 ounce) package lasagna noodles

8 ounces shredded mozzarella cheese

 

 

DIRECTIONS

In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; sauté until onions are transparent. Stir in pasta sauce, and heat through.

In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.

Spread a thin layer of the meat sauce in the bottom of a 13×9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.

Bake in a preheated 350 degree oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

Beef Enchiladas Recipe

Beef Enchiladas

Flour Tex-Mex tortillas INGREDIENTS

1 pound lean ground beef

1 small onion, chopped

1 (1.5 ounce) package dry enchilada sauce mix

10 (10 inch) flour tortillas

2 cups shredded Cheddar cheese

1 (2.25 ounce) can sliced black olives, drained

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). In a medium skillet over medium high heat, cook the ground beef and onion until beef is evenly browned and onion is tender.

 

Prepare the enchilada sauce according to package directions. Pour 1/4 cup of the sauce into the bottom of a 9×13 inch baking dish.

On each flour tortilla, place an equal portion of the ground beef mixture and about 1 ounce of Cheddar cheese, reserving at least 1/2 cup of cheese. Then tightly roll the tortillas and place seam side down in the baking dish.

Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.

Bake in a preheated oven for 20 minutes, or until the sauce is bubbly and cheese is thoroughly melted.

Baked Omlet Brunch

INGREDIENTS

  • 1/2 (1 pound) loaf white bread, cut into cubes
  • 1 1/2 pounds Cheddar cheese, shredded
  • 1 cup cubed cooked ham
  • 8 eggs
  • 2 cups milk
  • 1 pinch salt
  • 1 dash hot pepper sauce, or to taste
  • 1/4 cup chopped green onion

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×13 inch baking pan.
  2. Place half of the bread cubes on bottom of baking pan. Sprinkle with half of the ham and then half of the cheese; repeat.
  3. In a large bowl, beat together eggs, milk, salt, hot sauce and green onions. Pour egg mixture into pan.
  4. Place pan on top of a baking sheet with a rim and place in oven. Pour water into baking sheet and bake for 60 minutes, or until eggs have set.
